Ingredients
2pounds900g beef stew meat, cut into chunks
2tablespoonsall-purpose flour
Salt and pepperto taste
2tablespoonsvegetable oil
1large onionchopped
3clovesgarlicminced
2carrotspeeled and sliced
2celery stalkssliced
2potatoespeeled and cubed
1cupfrozen peas
2cupsbeef broth
1cupred wineor additional beef broth
2tablespoonstomato paste
2bay leaves
1teaspoondried thyme
1teaspoondried rosemary
Chopped fresh parsleyfor garnish
Instructions
Prep the Beef:
In a large bowl, combine the all-purpose flour, salt, and pepper. Toss the beef stew meat in the flour mixture to coat evenly.
Sauté in the Pressure King Pro:
Plug in the Pressure King Pro and select the "brown" function. Add vegetable oil to the pot.
Once the oil is hot, add the coated beef chunks and brown them on all sides. Work in batches if needed to avoid overcrowding the pot. Remove the browned beef and set aside.
Sauté the Aromatics:
In the same pot, add chopped onions and sauté until they turn translucent. Add minced garlic and sauté for an additional 1-2 minutes.
Combine Ingredients:
Return the browned beef to the pot. Add sliced carrots, celery, cubed potatoes, and frozen peas.
Add Liquids and Flavorings:
Stir in beef broth, red wine (or additional beef broth), and tomato paste. Mix well to combine all the ingredients.
Add bay leaves, dried thyme, and dried rosemary to the pot.
Pressure Cook the Stew:
Close the lid of the Pressure King Pro securely. Select the "stew" function and set the timer for 20 minutes.
Once the cooking time is up, carefully release the pressure according to the manufacturer's instructions.
Adjust and Serve:
Open the lid and give the stew a good stir. Taste and adjust the seasoning with more salt and pepper if needed.
Discard the bay leaves.
Ladle the hearty beef stew into serving bowls.
Garnish with chopped fresh parsley before serving.
